Quick Update
I have been so incredibly busy the past couple of weeks. My hours at work have increased which is fantastic news for my paychecks, I've been planning my son's 4th birthday party, and I recently went on a three day vacation for Memorial Day weekend.
While in Dallas (my checkpoint on the weekend vacation for the way up to Kansas and back home) I stayed at the Omni Hotel. Oh my! Oh my! Amazing! The room was only $95 a night but the feel was 5 star. I've stayed at more expensive resorts and didn't have as good of an experience as I had there. Let me tell you about the breakfast at one of the hotel's restaurants, Texas Spice. Everything is locally sourced. The buffet was abundant with hearty and wholesome items as well as gluten-free cereals and baked goods. I didn't get the buffet though. I like ordering off of the specialty breakfast items sections on the menu. The first morning I had the Smoked Salmon Platter and the whole grain bagel was topped with cream cheese, capers, red onion, chopped egg, and halved grape tomatoes. Delish! The next time I went there for breakfast I thought about ordering the same thing but talked myself out of it when I remembered the waiter had recommended the Huevos Rancheros. Spicy refried black beans were the base of the tower which consisted of three crispy corn tortillas, chorizo, two fried eggs, avocado slices, and salsa. That topped the Smoked Salmon Platter so much so that I practically licked the plate clean! I highly recommend this hotel and restaurant. Very family friendly and great customer service. Ready for the next trip out that way.
I came home to some very exciting news.. The Fairy Hobmother visited me!! I have seen other blogs that speak about the Fairy Hobmother but never in my wildest dreams did I imagine that I would have been visited. Check out the other fairy overlords at Appliances Online. Drooling over the double ovens. I live in an apartment but when I get a home you can bet I'll be purchasing a double oven. Sigh.
Well that is all for now... I'm about to throw something in the microwave since that is all I seem to have the energy for these days.
